the plash and gurgle of the sour-breathed milk,

the pat and slap of small spades on wet lumps.

How has Heaney used poetic techniques to reflect how powerful the memory of this experience is?

You should focus on the way Heaney created sound.

One of Heaney¡¯s greatest skills is his ability to choose words that have sound in them too.  Not only does he create an amazing image with the words he chooses, he deepens the experience by allowing the reader to listen too.

Here Heaney has used two techniques. Firstly, alliteration with the repetition of the ¡°s¡± sounds. Secondly, onomatopoeia, which are words whose meaning is the sound they make such as ¡°slap.¡±

As this is the final stanza, or verse, of the poem, Heaney is reflecting back on the experience of churning and trying to explain its power on him.
