Out came the four crocks, spilled their heavy lip

of cream, their white insides, in to the sterile churn

 

Look at the picture of a crock.  Notice the thick rim around the top, this is its lip.  This is used to hold the cream, which is white, before it is churned.

 

Sometimes objects are given the power to do things that only people can do or they are described in a way that reminds you of a person.  This is called personification and is used to make an object seem more powerful or to make the image more vivid and striking.
